Thistle Honey from the Souss-Massa Mountains
When you open this jar of thistle honey, you join us in the mountains of Souss-Massa, where thistles grow in light undergrowth and among rocky terrain. Our bees forage there amidst a landscape that is at once dry, mineral, and vegetal, giving rise to a honey with an authentic character.
Origin
This honey is produced from thistle flowers, a robust plant that grows in open undergrowth, on slopes, and in the rocky terrain of the Souss-Massa mountains.
In these landscapes, the thistle mingles with other mountain plants, notably thyme, thuja, and rosemary, offering the bees a rich and diverse environment.
Our hives are installed as close as possible to the thistle blooms to encourage foraging on this plant. The Souss-Massa region thus offers thistle honeys with a rare character, harvested by beekeepers who perpetuate traditional expertise.
As with the rest of our range, the honey is harvested without blending or heating, with particular attention paid to respecting the hives, mountain biodiversity, and the well-being of the bees.
Color & taste
Our thistle honey from the Souss-Massa mountains is distinguished by a beautiful amber color, a golden hue characteristic of honeys derived from thistle blooms.
On the palate, it reveals a sweet yet singular flavor, with a floral sweetness accompanied by subtle notes of undergrowth herbs and a delicate finish reminiscent of rock plants.
A honey with a subtle personality, expressing all the floral and mineral richness of the Moroccan mountains.
